Changing from "Intermittant" to "Constant" fan mode seems to have solved the problem.  It's been running now for a couple of hours, maintaining proper temperature with no problems.  Before, I couldn't get 20 minutes before the temperature readout was 60-something degrees.

 

Thank you for your help!  Now on to the next issue………and thread!

That's Great News Jason  Wink Thanks for the report back too…

Still think you had cold air reflecting off of something and the temp sensor was picking that up…But you should be better off with continuous fan anyway…
